The number of people who suffer from food intolerances has risen dramatically in the past 60 years. While many people suffer from food related illnesses such as food allergies where the consequences are obvious and usually immediate, many people suffer from some form of food intolerance without even realising. Some experts have even begun referring to increasing cases of food intolerances as a ‘silent epidemic’ and while this may sound a little dramatic, it may not be totally inappropriate. Food intolerances often start with a sore throat, an ear infection or that common cold that just won’t go away and often go on to find new ways to manifest themselves such as arthritic pain, behavioral problems and migraines. Left undiagnosed and untreated food intolerances slowly chip away and ware down the body’s immune function and pave the way for more serious illnesses which put enormous pressures on our tired bodies and over stretched health services.

As our global food system and an ever more powerful food industry divorces us further from our food they also divorce us from the effects food can have on our health - both positive and negative. The basic ‘human:food’ links we so desperately need continue to be severed and become the ‘norm‘ and now conventional medicine and the very people we turn to for help are swiftly forgetting the most basic truth that we live and breath the food we eat. Instead of understanding the causes of ill health by considering the most fundamental elements of life we are now encouraged to use unnecessary medications and   learn to live with chronic illness. Though the predominant attitudes to food and health may seem rather sobering things don’t have to be this way.

Understanding the important relationship you have with your food and the ways in which your food choices and habits can make you ill is key. There is plenty of literature out there relating to food allergies but many experts are still reluctant to fully investigate  and acknowledge the severity of food intolerances which are admittedly much more difficult to decipher as they tend to be far more insidious and cause ill health over months or even years. The information and collective experiences of others is however out there and it is these elements I have tried to summarise and consolidate in a logical way to help you here on WrinklyPepper. I am a scientist but an open minded one (yes we do exist) and to that end I have taken great pains to ensure that the information provided here about food intolerances is informative, unbiased, based on credible information and safe. You may not necessarily agree with everything you read and some parts won’t be applicable to you but it is my hope that this section of WrinklyPepper will provide you with a solid foundation on which to base your own exploration of your health and provide you with the support I and many of the people I have worked with never had.
